Nearly a week ago I enrolled in Weight Watchers. I have a real love/hate relationship with food -- I absolutely LOVE it. It apparently hates me. Ugh.
I realize I am not alone in the struggle to find a healthy weight. I say "healthy weight" not "lose weight" or "I'm fat" at home because I have a daughter, and it is important for me not to project my body issues onto her. Girls have a hard enough time with self-esteem and self-worth. Although let's be real, I need to lose pounds. About 50 is my goal. If I write it and share it with the world perhaps I will stick with it this time. I talked the Hubs into joining also. It's definitely easier when the other big eater in the house is focuses on the same goal.
This week hasn't been so terrible. I have cooked, with the exception of today, breakfast egg whites for Stu and I each morning. I made healthy-ish chicken salad the other day. And Stu has taken that for lunch a few times this week. Last night was kind of a killer. We had a family birthday celebration and let's be real, I have never said no to cake. And I probably never will. Which is what got me into this mess in the first place. Ugh. It's the circle and story of my life.
My little win today was that I did not eat any of the Publix birthday cake still in the fridge. Also, I got on the scale (prematurely, I know. You're only supposed to weigh once a week). But I was happy to see that I am 4 pounds down. That's not enough for anyone to notice, including my pants, but it is a move in the right direction. So I will take it. At least all those freaking salads this week were worth it. I hate lettuce. It is vile and disgusting. And now it's on my daily menu. Since I hate lettuce so much, I try to jazz up my salads as best I can. Today's wasn't terrible. I didn't gag at all actually.
This time I put in some avocado, a couple of hard-boiled eggs (whites only), few tomatoes, couple of cubes of cheese (less sodium if you cut up a block, don't buy the shredded kind every again), and finally two pinches of these tortilla strips. They are DELICIOUS! I can't make a salad at home without these things. A while back I bought the southwest flavored kind... those were even better! I don't know how many points the southwest ones are, but these tai-colored ones are 2 points for 2 TBS. Not bad. All in all, not a bad lunch.
Tonight we are making shrimp scampi. I will let you know later how it worked out (for points and taste). We are making low-zero sodium scampi. Anyway, wish me luck.
